We are fortunate to have 80 mature olive trees line our vine rows at our new vineyard, Mira Laguna in Santa Ynez Valley. We've been organically farming these trees for the last year and its finally time to taste the fruits of our labor! 

The trees were carefully hand harvested on November 17th, 2025. After a long day with 6 pairs of hands we harvested 0.56 tons of olives. We brought them to the mill the next morning and watched as our tiny treasures transformed into liquid gold. 

The olives were harvested early to maximize antioxidant levels and enhance anti-inflammatory properties, resulting in a cold-pressed oil with the perfect balance of peppery notes and fruity undertones. Perfect for drizzling, dipping, and cooking <3
